Moist and Tender Oven Pot Roast {Recipe}



It has stayed pretty warm this winter in Florida but that doesn't mean that we don't love the comfort foods of winter. Last week I made a fantastic pot roast. It was moist and tender and very simple to make. It also feeds a crowd without breaking a budget.

Heat olive oil in a pot that has a lid and can go in the oven or in a dutch oven. Add an onion and brown it a little to add nice flavor. After browned, remove and set aside.

  

Generously season a beef roast with salt and pepper. Once seasoned place in the pot to brown on all sides.

  

Once the roast is browned on all sides remove from pan.


Add a can of diced tomatoes to the pan to deglaze all of the flavor that is stuck on the bottom of the pot. I also add in a cup of water.

  


Add onions back to the pot along with browned roast beef.


I also like potatoes with my pot roast. I love the way they pick up the flavors of the other ingredients. The small red skin potatoes are my favorite but any others would work too. Simple wash and cut in half. Quarters if they are really large.

  

To the top I add baby carrots. I prefer them on the top so they don't get completely mushy.


The last thing I add is a generous topping of homemade onion soup mix. It is full of great flavors and not full of all of the unnecessary ingredients contained in the store version. As an added bonus, the homemade onion soup mix is gluten free. (Recipe coming soon)

  

Bake covered with lid in a 275 degree oven for about 4 hours. Adjust the time if your roast is less/more than 5 pounds.

Moist and Tender Oven Pot Roast

Serves six

Ingredients
Beef Roast (5 lbs)
Onion
Red Skin Potatoes
Baby Carrots
Can of Diced Tomatoes
1 cup Water
Homemade Onion Soup Mix
Olive Oil
Salt & Pepper

Method

Heat a couple of tablespoons of olive oil on medium high in a pot that has a lid and can go in the oven or in a dutch oven. Add an onion and brown it. After browned, remove and set aside. Generously season a beef roast with salt and pepper. Once seasoned place in the pot to brown on all sides. After the roast is browned on all sides remove from pan. Add a can of diced tomatoes to the pan to deglaze all of the flavor that is stuck on the bottom of the pot. Add in a cup of water. Add onions back to the pot along with browned roast beef. Add halved red skin potatoes and carrots to the pot. Top with a generous portion of homemade onion soup mix. Bake covered with lid in a 275 degree oven for about 4 hours. Adjust the time if your roast is less/more than 5 pounds.
