Guinness Chocolate Cake With Cream Cheese Frosting

Not only is this my absolute favorite recipe but this is the best cake you will ever have! My husband takes it to every office food event (by request, seen below in my oh so fancy cake carrier) not to mention it is his favorite too. The frosting is thick and rich and won't run off. Also makes great cupcakes! See them here. This would be a great dessert to make for your beer loving hubby for his Birthday, Father's Day or even Valentine's Day!

Guinness Chocolate Cake with Cream Cheese Frosting



1 cup Guinness
1 stick butter
3/4 cup unsweetened cocoa
2 cups dark brown sugar
3/4 cup sour cream
2 eggs
1 tablespoon vanilla extract
2 cups flour
2 1/2 teaspoons baking soda
1 teaspoon salt
2 (8 inch) cake pans sprayed with non-stick spray


16 ounces cream cheese, cold
10 tablespoons butter, cold
2 tablespoons Irish cream liqueur (Bailey's) or pure vanilla extract
5 cups powdered sugar sifted
1 whole vanilla bean

Preheat oven to 350

Combine the Guinness and butter in a large sauce pan, heat to melt the butter. Remove from heat, and whisk in the cocoa and sugar. In a bowl, whisk the sour cream with the eggs and vanilla, then combine with the Guinness mixture. Sift together the flour, salt and baking soda, and fold into the batter. Pour into 2 cake pans that have been sprayed with non-stick spray (I also add a circle of parchment to the bottom) and bake for 25-30 minutes, or until inserted cake tester comes out clean. Let stand 10 minutes, remove from cake pans and cool completely on a wire rack.

Using a stand mixer, whip cream cheese, butter and contents of vanilla bean until smooth, sift in sugar, and beat. Add Irish cream liqueur or vanilla extract, and beat until smooth. Spread over cooled cake. I also topped mine with Godiva chocolate shavings (optional). Enjoy!
