Guinness Cupcakes With Irish Cream Cheese Frosting

Not only is this my absolute favorite recipe but these are the best cupcakes you will ever have! The frosting is thick and rich and won't run off. Also makes a great cake!



1 cup Guinness
1 stick unsalted butter
3/4 cup unsweetened cocoa
2 cups dark brown sugar
3/4 cup sour cream
2 eggs
1 tablespoon vanilla extract
2 cups flour
2 1/2 teaspoons baking soda
1 teaspoon salt
Cupcake wrappers


8 ounces cream cheese, cold
5 tablespoons butter or margarine, cold
2 tablespoons Irish cream liqueur (Bailey's) or Vanilla Extract
2 - 2 1/2 cups powdered sugar sifted
1 whole vanilla bean

Preheat oven to 350

Combine the Guinness and the butter, in a large sauce pan, and heat to melt the butter. Remove from heat and whisk in the cocoa and sugar. In a bowl, whisk the sour cream with the eggs and vanilla, then add to the Guinness mixture. Sift together the flour and baking soda, and fold into the batter. Pour into muffin pan lined with cupcake wrappers and bake for 25 minutes, or until inserted cake tester comes out clean. Let stand 10 minutes, remove from muffin pan, and cool completely on a wire rack.

Using a hand mixer, whip cream cheese, butter and contents of vanilla bean until smooth, sift in sugar, and beat. Add Irish cream liqueur, and beat until smooth. Spread over cooled cupcakes. Enjoy!
